There is growing interest in natural ingredients that can be used as preservatives in the food industry. Significant attention is dedicated to propolis and essential oils as they often exhibit antioxidant and antimicrobial properties. Domiati cheese fortified with propolis, ginger and thyme were evaluated. The cheeses were analyzed fresh and during ripening for their chemical composition, microbiological and organoleptic properties. The addition of 5% & 10% propolis, 0.5% ginger and 0.5% thyme caused decreased in pH value but less than the control. Thyme and ginger fortified cheese caused increase in the WSN, NPN and (T.V.F.A) contents in all cheeses. The addition of 5%, 10% propolis, 0.5% ginger and 0.5% thyme respectively, had the highest effect on total bacterial count. Which indicate its antimicrobial effect on cheese microflora. Moulds, yeasts and Escherichia coli (E. coli), were not detected in treated cheese through ripening. All cheese samples made with propolis, ginger and thyme had acceptable appearance and body & texture during ripening. Propolis and essential oils can be used to improve the quality of Domiati cheese and can be used as natural preservatives to increase its shelf life up to 60 days of ripening at room temperature or at 4 ̊C±2.

Cheese is a dairy-product and obtained from milk by using starter cultures and enzymes to coagulate the milk through a chemical process. Cheese has one of the highest growth rates among dairy products manufactured in many countries. Cheese could be divided into two major categories based on the fat content, including full-fat cheese and reduced or low-fat cheese. The low-fat cheese term differs within cheese varieties, countries, and other factors. Generally, cheese with fat content less than the full-fat version is considered low-fat cheese for consumers. The consumption and marketing of low-fat cheeses have accelerated over the last two decades. Fat is important due to its major contribution to the flavor, body and texture of the cheese. Numerous low-fat cheeses are characterized as mild flavor, weak body and texture, and less functional characteristics. Intensive research on low-fat cheese has developed three basic strategies for addressing fat-related problems, such as modifications of procedures, adjunct cultures, and fat replacers. This work aim is to highlight and review the characteristics of two types of low-fat cheeses, such as low-fat process cheese (LFPC) and low-fat Cheddar cheese (LFCC).

The date palm, Phoenix dactylifera L. is an important fruit trees growing in the New Valley, Egypt. The old world date mite, Oligonychus afrasiaticus (McGregor, 1939) (Acari: Tetranychidae) is one of the most harmful pests of the date palms, due to the economic damage caused in the production of dates especially in the New Valley, Egypt. Therefore, the efficiency of some recommended chemical compounds (i.e., abamectin (1.8% EC), chlorfenapyr (36% SC), fenopyroximate (5% EC), cyflumetofen (20% SC) and hexythiazox (10% WP) against the pest was estimated under laboratory conditions.
